Salary Range: $90 - $100K The Sacramento Marriott located in Rancho Cordova is a unique Full-Service hotel with 14,000 square feet of meeting space and full catering capabilities. This is an exceptional opportunity to join the team of the Sacramento Marriott Rancho Cordova! Our 265-room property just completed a full renovation from top-to-bottom. This pivotal role offers a unique chance to shape the culinary identity of our property as we come out of our renovation and begin to reform a reputation for excellence within a revitalized and forward-thinking hospitality environment. The Executive Chef will be a visionary and hands-on culinary leader responsible for overseeing all kitchen operations, including our restaurant, banquet and catering services, and menu development. This role is instrumental in crafting a refined and memorable dining experience that reflects the standards of the Sacramento Marriott Rancho Cordova. The ideal candidate will bring a strong background in Full-Service hotel culinary operations, a passion for innovative cuisine, and the ability to inspire and lead a high-performing team in a dynamic, fast-paced setting. Availability: The hotel operates 7 days a week, 24 hours a day. Schedules must accommodate fluctuating business demands. Key Responsibilities:
- Oversee all kitchen operations, including restaurants, banquets, in-room dining, and special events.
- Check that good personal hygiene is practiced by all staff members daily.
- Sets up weekly work schedules and production schedules. Schedules should be posted on Wednesday for the following week.
- Lead, train, and mentor a high-performing kitchen team, including sous chefs, line cooks, and stewards.
- Check all food needs and proper usage in accordance to recipes.
- Check all banquet guarantees for accuracy and for proper food production according to needs. Avoid overproduction.
- Responsible for writing 90 day and annual reviews of all kitchen employees. All reviews must be approved by the Director of F&B and Human Resources before given to the employee.
- Use employee training documentation to record all areas of training completed and turn into Human Resources to be included in the employee file.
- Responsible for continued training of all cooks and encouraging cooks to improve in preparation and presentation.
- Responsible for conducting standup meetings every day. Go over daily activities each day with staff.
- Responsible for long- and short-term planning and day-to-day operations of the kitchen and related areas.
- Develop restaurant and banquet menus that aligned with current food trends and guest expectations. `
- Ensure consistent food quality, presentation, and sanitation standards are met across all culinary areas.
- Order, maintaining inventory of food products and equipment, and ensuring accurate invoice processing through the BirchStreet purchasing system.
- Lead, train, and mentor a high-performing kitchen team, including sous chefs, line cooks, and stewards.
- Manage food and labor costs within budgeted guidelines; analyze food cost reports and adjust as needed.
- Responsible for keeping a high level of employee morale in the kitchen by encouraging employees to work as a team, encouraging growth and learning by implementing a training program and by maintaining a fair and consistent temperament and attitude toward all employees at all times.
- Responsible for reviewing payroll and controlling labor cost.
- Maintain compliance with health, safety, and sanitation regulations (local, state, and federal).
- Inspect all freezers and refrigerators for cleanliness, organization, and correct temperature storage of food products.
- Inspect all food products for proper rotation and usage of food to avoid food waste.
- Ensure all staff is up to date on all food safety training.
- Responsible for production and presentation of all restaurant menus, room service
- Collaborate with the Food & Beverage team to plan events, tastings, and promotional initiatives.
- Conduct regular inventory, ordering, and vendor management to ensure availability of quality ingredients.
- Handle staffing matters including hiring, performance evaluations, and scheduling.
- Execute and promote the hotel Safety Prevention Program to minimize liabilities and related expenses.

EDUCATION/EXPERIENCE:
- Minimum 5 years of culinary leadership / management experience in an upscale or full-service hotel, resort, or high-volume restaurant.
- Degree or certification in Culinary Arts preferred.
- Proven track record of effective kitchen leadership and staff development.
- In-depth knowledge of various cuisines, plating techniques, and modern culinary trends.
- Excellent organizational, financial, and communication skills.
- CA Food Handler, ServSafe Food Manager, Allergen and Alcohol Certification or equivalent food safety certification required.
- Minimum 5 years' Hotel Experience required.
